The frugal foodie: Healthy, quick study snack

Midterms have passed and so has spring break, leaving students faced with the final stretch of the year. That being said, many of us may find ourselves bored with the snacks we have eaten all year and are searching for new snacks to munch on between classes or while watching Netflix with friends. These snacks are quick, tasty and easy to make and will keep your food options interesting over the last month and a half of the semester. 

Almond Butter Apple Slices


1 apple

2 tablespoons of almond butter

A handful of chocolate chips 


1. Slice an apple of any kind (my favorite to pair with these ingredients is a Granny Smith)

2. Heat 2 tablespoons of almond butter (I prefer Justin’s almond butter)

3. Spread the almond butter on each apple slice

4. Top the slices with chocolate chips 

5. Enjoy!

English Muffin Pizza


2 English muffins

1/2 cup of tomato sauce 

1/3 cup of shredded cheese

Mushrooms (or any vegetable of your choice)


1. Preheat oven to 350 F

2. Spread 2 tablespoons of sauce over each half slice of the

 English muffin

3. Sprinkle 2 tablespoons of cheese on top 

4. Add veggies as a garnish

5. Bake English muffins for 10-15 minutes, or until the cheese

 is melted

6. Enjoy!
